In this Chapter, students will master the fundamental cake techniques that are often overlooked but are crucial to cake success. By the end of this chapter, students will fully understand how to properly prepare mise en place, weigh ingredients, cream butter and sugar, and much, much more! This is a hands-on class where students will have the ability to practice in real-time.
In this chapter, students will learn about baking ratios. They will put those ratios into practice when they develop their first sponge cake recipe.
In this chapter, students will learn basic American buttercream and glaze recipes so that they can customize them in any number of ways. By the end of this chapter, students will be empowered to create their very own cake recipes from start to finish.
